Ribolla Gialla is one of the oldest Friulian varieties, Is known since 14th century and is original from the eastern hilly area bordering to Slovenia . It was one of the favorite wines of nobles and of the Habsburg family. Rubini count among very few producers who submit to the sparkling process this variety. The wine which is made from is a Ribolla Gialla IGT vinified using Ribolla Gialla grapes grown in Spessa di Cividale, in the heart of Colli Orientali del Friuli. Unfortunately the specifications doesn't allow to produce sparkling wines in our area, that's why cannot bear the DOC appellation. The color is light straw yellow, with a medium fine perlage. The aroma is fresh and floral. Reminds of acacia flowers, honey and has very fine hints of bread crust. Delicate at the taste and fresh. The very elegant perlage reveal an intense floral sensation and a distinctive hint of bread crust. The acidity, characteristic of Ribolla Gialla variety, is well balanced by the residual sugar. The aftertaste is persistent and mellow to elegant floral notes.

Wine Making:
It is produced following the charmat-long method and is bottled after 3 months of aging on the yeast, during which is stirred daily so reach major finesse in taste and perlage. ALCOHOL CONTENT 12 % by vol. TOTAL ACIDITY 6 g/l PRESERVATION up to 2 years SERVING SUGGESTIONS Excellent as aperitivo, ideal to create a variety of cocktails. The food pairings are sea food, especially when grilled. Is perfect when matched with shellfish. SERVING TEMPERATURE We recommend to serve at a temperature 45° - 49° F
