Wine Making:
Pressing, alcoholic fermentation with peels and selected yeasts, at 22-27 °C temperature. During the day, "rimontaggi" (lasting 5 minutes) are effected every 1.30H in order to favor the extraction of the coloring material. Attaining 3-4 degrees of sugar, the mass is "svinata" (peels are separated by the liquid part), then the fermentation in French oak barriques follows, where the refinement still happens for 3-4 months. Bottle refining for minimum 2 months.
