Wine Making:
Cascina Adelaide, situated directly beneath Barolo castle, cuts a quixotic profile. The ultra-modern, underground winery contrasts with the dour, 13th century fortification, but is anything but impractical. Built by the Drocco family in '99, it was designed to exalt the terroir of the cru vineyards, and is outfitted with premium equipment and a gravity-fed layout. Their base Barolo is a blend of 5 estate holdings in Barolo, La Morra, Castiglione Falleto, and Novello. It's pure, elegant, and built to age, but drinks young.
